Premium Shiraz from the Lacey vineyard in the ancient northern hills. Whole berry, ultra-small batch open ferment. Hand plunged for two weeks. Matured in a new French oak puncheon.

No fining, minimal filtration. Only 52 dozen produced.

Deep red with a ruby hue. Aromas of dense blue fruits, fresh plum and spice. The palate is rich and mouth filling, with dark red and black berries. Fine grained French oak adds to the complexity with lingering cinnamon and toasted spices. A full-bodied wine designed for ageing.

Select fruit from the Lacey vineyard in the Seaview sub region of northern McLaren Vale. The entire block is only 0.11 hectares and 188 vines, producing about 700kg of fruit. Red brown earth over limestone base, 700 million years old, producing structural wines with fine boned tannins. Selectiv® harvested and transferred directly to open fermenter with no destemming/crushing or pumping in order to maintain the whole berries. Cultured yeast used, 14-day open fermentation, hand plunged. Pressed to a single new French puncheon (500L) where it was matured for 30 months. Bottle aged for a minimum of 12 months before release.
